Another stunning Honduras offering produced by Nelson Ramirez at 1500MASL in the Santa Barbara Mountains. It was a very experimental year for Nelson with processing and as a result he plans on fermenting all of his washed coffees in the future to create a bright sparkling acidity. This experimental lot is 100% Parainema which is one of the less common varietals planted due to lower yields then over varietals like Catuai. Although the yields are low, unlike Catuai this variety is resistant to leaf rust which has been an ongoing problem for producers all over Honduras. We can’t wait to work with more of Nelsons coffees in the future. We hope you enjoy this amazing coffee as much as we do!
